  • Thank God it’s Friday!

    Every day is a blessing, a new beginning, an opportunity to start again and create the life that you want! But Fridays are special for us, every Friday we get to share a recipe with you!

    Let’s get baking!!!

    Baking is indeed some sort of therapy, it makes you focus on the present moment, on what you are doing, on what you are creating! For this recipe, If you want to add some extra ingredients, feel free to do so, get creative! Have fun!!!

    Without further a do the recipe of the day is…

    Blueberry Muffins with Panela Ancient Cane

    Here’s what you’ll need:

    A big smile
    Washed hands lol

    • 2 ½ cup blanched almond flour
    • 10 pts. Colfarmer Panela Ancient Cane
    • 2 tsp baking powder (no added aluminum)
    • 3/4 cup blueberries (fresh or frozen)
    • 3 eggs
    • ⅓ cup unsweetened almond milk
    • ⅓ cup coconut oil
    • ½ tsp cinnamon powder (optional)
    • 1 tsp poppy seeds
    • ¼ tsp salt
    • ½ tsp vanilla extract

    Instructions:
    Preheat you over to 350 F. Mix the dry ingredients, mix the wet ingredients (make sure the coconut oil is melted), combine the two, and fold in the blueberries gently. Grease a muffin pan with coconut oil, and distribute the batter evenly. Place a couple of blueberries on top of each muffin. Bake for about 25 minutes, and when your muffins are almost done, brush a mixture of coconut oil or grass-fed butter and Panela Ancient cane on top of each muffin and bake at 400F for a couple of minutes.

    Cinnamon rolLs with PaneLa and dark chocolate

    For the dough you’ll need:

    • 2 cups whole wheat flour ( or oat flour)
    • 2-3 packets of Colfarmer Panela
    • ½ tbsp ground cinnamon
    • ½ tbsp baking powderfoo
    • ½ tsp salt
    • 3 tbsp melted ghee
    • ¾ cup almond milk
    • For the filling: (Adjust how you want it)
    • 6 tbsp Almond butter
    • 6 Colfarmer Panela
    • Ground cinnamon
    • For the Chocolate sauce:
    • 1/2 cup Dark Chocolate chips sugar-free or semi-sweet
    • ¾ cup almond milk

    Directions:
    Preheat oven at 350 F and grease any baking dish. For the dough, start by mixing the dry ingredients in a bowl. Mixed the wet ingredients in a different bowl (make sure the almond milk is slightly warm or the ghee will harden). Combine both and make a non-sticky dough. Knead the dough until well combined, then let it rest for about 15 minutes. Place your dough on a floured surface and roll it out into 2 rectangles. Smear the almond butter, the panela, and the cinnamon. Roll the 2 rectangles into 2 logs, and slice into small rolls. Place those babies into a baking dish, brushed an egg wash onto the rolls, and bake for about 20-30 minutes. For the chocolate sauce, melt the chocolate chips, add the almond milk, mix and smear the sauce on the cinnamon rolls.

    It’s Friday and to celebrate a successful week we have come up with a recipe for all our sweet-toothed people out there!
    It’s ok…
    It’s the weekend…
    It’s the perfect time to indulge in baked goods like these easy-and-delicious…..

    Panela – Oatmeal Cookies

    Here’s what you’ll need:

    • 1/2 cup of oat flour
    • 1/2 cup of oats
    • 8 packets of Colfarmer Panela Ancient cane (or more if
      you like them sweeter)
    • 1 egg
    • Half banana mashed
    • 2 tbsp of coconut oil
    • 1 tbsp cinnamon powder (opcional)
    • Dried cranberries or chocolate chips ( as much as you want)
    • 1tsp vanilla extract
    • A hint of salt

    Instructions:
    Mix all the ingredients, roll into little balls and place them on a cookie sheet. Slightly flatten each cookie and put them in a preheated oven at 350°F for about 10 minutes (keep in mind ovens are different).

  • It’s Mother’s day weekend whoop whoop!!!

    A Happy Mother’s day to all the AMAZING moms out there!

    We came up with todays recipe thinking about you all. How often do you wanna treat yourself or your kids with an easy to make chocolate cake that is not only healthier but it can be ready in 5 minutes?  If the answer is often, this recipe is perfect for you!

    Chocolate Mug Cake with Panela Ancient Cane!

    All you need is:

    • 2 tbsp of oat  flour
    • 2 tbsp  of organic Cocoa powder
    • 1 egg
    • 3 sachets of Colfarmers Panela Ancient Cane
    • 1 tbsp of almond butter
    • 1 tsp of coconut oil
    • 1/2 tsp of baking powder (aluminum free)

    Instructions:
    Mixed all the ingredients  in a mug with a fork and microwave  for about a  minute (keep in mind that microwaves are different so it might be ready sooner or it might take a little longer).

    Add some dark chocolate pieces, cherries and sprinkle some Panela on top!!
