Baking is indeed some sort of therapy, it makes you focus on the present moment, on what you are doing, on what you are creating! For this recipe, If you want to add some extra ingredients, feel free to do so, get creative! Have fun!!!

Blueberry Muffins with Panela Ancient Cane
Here’s what you’ll need:
A big smile
Washed hands lol- 2 ½ cup blanched almond flour
- 10 pts. Colfarmer Panela Ancient Cane
- 2 tsp baking powder (no added aluminum)
- 3/4 cup blueberries (fresh or frozen)
- 3 eggs
- ⅓ cup unsweetened almond milk
- ⅓ cup coconut oil
- ½ tsp cinnamon powder (optional)
- 1 tsp poppy seeds
- ¼ tsp salt
- ½ tsp vanilla extract
Instructions:
Preheat you over to 350 F. Mix the dry ingredients, mix the wet ingredients (make sure the coconut oil is melted), combine the two, and fold in the blueberries gently. Grease a muffin pan with coconut oil, and distribute the batter evenly. Place a couple of blueberries on top of each muffin. Bake for about 25 minutes, and when your muffins are almost done, brush a mixture of coconut oil or grass-fed butter and Panela Ancient cane on top of each muffin and bake at 400F for a couple of minutes.Enjoy and have a great weekend!!!
